Apple Snack Cake with Brown Butter Frosting

A buttery moist snack cake filled with apples and baked until golden. Topped with a silky smooth browned butter cream cheese frosting.

This delicious apple snack cake should be at the top of your priority list to make this fall season. My neighborhood taste-testers gave this cake a double thumbs up! We’ve been to our local apple orchards about 3 times this season so far. I have about 4-5 apple-included recipes I’ve either posted already or am currently working on. Not to mention I’ve been canning the leftover apples. Lol!

Tips for baking this apple snack cake:

Finely chop the apples – small pieces distribute evenly through the batter so the cake doesn’t get soggy pockets.
Don’t over-mix the batter – once you add the dry ingredients, stir just until combined. Overmixing will make the cake dense instead of tender.

How to make this apple snack cake with brown butter frosting step-by-step:

In a large bowl, whisk melted butter, brown sugar, and granulated sugar until smooth.

Beat in eggs and vanilla. Preheat oven to 350 F. Line a 8×8 or 9×9 pan with parchment paper.
In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

 Stir in sour cream.

Fold in dry ingredients until just combined. Stir in apples. Spread into prepared pan and bake 30–38 minutes, until a toothpick comes out clean. Cool completely before frosting.

Brown your butter. Beat 4 oz cream cheese until smooth. Add browned butter and softened butter and mix until combined. Beat in powdered sugar, vanilla, and salt until fluffy. Spread over cooled cake.

Ingredients
  

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • ½ cup butter melted and slightly cooled
  • 1/2 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 1 tbsp maple syrup
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup plain yogurt or sour cream
  • 1 ½ cups (2 medium) apples peeled, cored, and chopped
  • 4 tbsp butter 3 tbsp browned and 1 tbsp softened
  • 4 oz cream cheese softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Method
 

Bake the Cake

Make the Frosting
  1. In a small saucepan, melt the butter over medium heat. Continue cooking until golden brown with a nutty aroma (3–5 minutes). Pour into a heat-safe bowl and cool until partially solidified.
  2. In a mixing bowl, beat 4 oz cream cheese until smooth. Add browned butter and softened butter and mix until combined.
  3. Beat in powdered sugar, vanilla, and salt until fluffy.
  4. Spread over cooled cake.
