Apple Snack Cake with Brown Butter Frosting

Moist spiced cake with chopped apples baked in and the topped with a smooth browned butter frosting.

Materials

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • ½ cup butter melted and slightly cooled
  • 1/2 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 1 tbsp maple syrup
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup plain yogurt or sour cream
  • 1 ½ cups (2 medium) apples peeled, cored, and chopped
  • 4 tbsp butter 3 tbsp browned and 1 tbsp softened
  • 4 oz cream cheese softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Instructions

Bake the Cake

  • Preheat oven to 350 F. Line a 8x8 or 9x9 pan with parchment paper.
  • In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • In a large bowl, whisk melted butter, brown sugar, and granulated sugar until smooth.
  • Beat in eggs and vanilla. Stir in sour cream.
  • Fold in dry ingredients until just combined. Stir in apples.
  • Spread into prepared pan and bake 30–38 minutes, until a toothpick comes out clean. Cool completely before frosting.

Make the Frosting

  • In a small saucepan, melt the butter over medium heat. Continue cooking until golden brown with a nutty aroma (3–5 minutes). Pour into a heat-safe bowl and cool until partially solidified.
  • In a mixing bowl, beat 4 oz cream cheese until smooth. Add browned butter and softened butter and mix until combined.
  • Beat in powdered sugar, vanilla, and salt until fluffy.
  • Spread over cooled cake.
