Apple Oatmeal Cookies
Buttery, chewy apple oatmeal cookie with cinnamon apples in every bite and topped with a sweet maple glaze.
I know, I know… another apple recipe. I warned you and what can I say, apple is the superior fall flavor! These soft and chewy apple oatmeal cookies are a fall must-bake! My neighborhood taste-testers gave them rave reviews and even took a batch to work and his employees loved them too—so you know they’re a crowd-pleaser! With all the apples we’ve picked this season, these cookies were definitely at the top of my recipe list.
Tips for baking these oatmeal cookies:
– Finely chop the apples – helps cookies bake evenly and contains less moisture.
– Slightly undercook the cookies – they will look slightly undercooked when they need to be taken out of the oven. They will continue to cook just enough on the pan for 10-15 minutes before transferring them to cooling rack. This step ensures you have a chewy cookie.
– Chill the dough – letting the dough chill for at least 30 minutes makes a more flavorful cookie and helps the cookies not spread.
How to make these apple oatmeal cookies step-by-step:
Peel, core, and chop 1 ½ cups (2 apples) Toss prepared apples with 1 Tbsp brown sugar + ½ tsp cinnamon. Set aside.
In a large bowl, whisk melted butter and sugars until glossy.
Add 1 egg, 1 yolk, and vanilla extract then whisk until smooth.
In another bowl, whisk 1 ¾ cups flour, 1 ½ cups oats, ½ tsp baking soda, ½ tsp baking powder, spices, and salt.
Stir dry ingredients into wet until just combined. Fold in about 1 cup of the apple mixture (reserve ½ cup for topping).
Cover and refrigerate for at least 30 minutes (up to overnight).
Preheat oven to 350°F. Scoop about 2 tbsp balls onto baking sheets. Press a few reserved apple pieces onto the tops.
Bake 11–13 minutes, until edges are golden but centers look soft. Let sit on pan 5 minutes before moving.
Glaze (optional): Whisk 1 cup powdered sugar, 1 tsp maple extract, 2-3 tbsp heavy cream depending on desired thickness, and salt. Drizzle over cooled cookies.

- To prep for the apples, toss chopped apples with 1 tbsp brown sugar + ½ tsp cinnamon. Set aside.
- In a large bowl, whisk melted butter and sugars until glossy. Add egg, yolk, and whisk until smooth. Stir in vanilla.
- In another bowl, whisk 1 3/4 cup flour, 1 1/2 cup oats, 1/2 tsp baking soda, 1/2 tsp baking powder, spices, and salt.
- Stir dry ingredients into wet until just combined. Fold in about 1 cup of the apple mixture.
- Cover and refrigerate for at least 30 minutes (up to overnight).
- Preheat oven to 350°F. Scoop dough to your desired size (I made mine fairly large, it made 16 large cookies) roll into balls, and place onto parchment-lined baking sheets.
- Bake for 11–13 minutes, until edges are golden but centers look soft. Let sit on pan 5 minutes before moving.
- Glaze (optional): Whisk powdered sugar, maple extract, cream, and salt until drizzle-consistency. Drizzle over cooled cookies.
