Blondies:
- 10 tablespoon butter melted
- 1 cup 180g brown sugar
- ¾ cup 180g granulated sugar
- 1 egg + 1 egg yolk
- 1 tbsp vanilla extract
- 1/4 tsp salt
- 1 1/2 cup 225g flour
- 1 oz freeze dried strawberries blended into powder
Glaze (optional) :
- ½ cup powdered sugar
- 1 tbsp milk
- 1 tsp vanilla bean paste

Preheat oven to 340 F and line a 8x8 square pan with parchment paper.
In a microwave-safe mixing bowl, melt the butter and mix in both sugars until combined. The sugar will not be dissolved.
Mix in the egg, egg yolk, and vanilla bean paste until smooth. Set aside.
Smash freeze-dried strawberries until mostly fine powder but there should still be a few small pieces and coarse crumbs. Pour into the bowl with the rest of the ingredients, along with adding the flour and salt. Gently stir with a rubber spatula until all combined.
Pour batter into the prepared pan and smooth it out evenly. Bake at 340 F for 24-28 minutes or until golden brown with a crinkle top and not jiggly. Let cool for at least 15 minutes and then cut into 9 or 12 squares.
Optional- Sift a light layer of powdered sugar and/or make the vanilla bean glaze by mixing the ½ cup of powdered sugar with 1 tablespoon of milk and 1 teaspoon of vanilla bean paste in a small bowl and drizzle over top.
