Materials

Blondies:

  • 10 tablespoon butter melted
  • 1 cup 180g brown sugar
  • ¾ cup 180g granulated sugar
  • 1 egg + 1 egg yolk
  • 1 tbsp vanilla extract
  • 1/4 tsp salt
  • 1 1/2 cup 225g flour
  • 1 oz freeze dried strawberries blended into powder

Glaze (optional) :

  • ½ cup powdered sugar
  • 1 tbsp milk
  • 1 tsp vanilla bean paste

Instructions

  • Preheat oven to 340 F and line a 8x8 square pan with parchment paper.
  • In a microwave-safe mixing bowl, melt the butter and mix in both sugars until combined. The sugar will not be dissolved.
  • Mix in the egg, egg yolk, and vanilla bean paste until smooth. Set aside.
  • Smash freeze-dried strawberries until mostly fine powder but there should still be a few small pieces and coarse crumbs. Pour into the bowl with the rest of the ingredients, along with adding the flour and salt. Gently stir with a rubber spatula until all combined.
  • Pour batter into the prepared pan and smooth it out evenly. Bake at 340 F for 24-28 minutes or until golden brown with a crinkle top and not jiggly. Let cool for at least 15 minutes and then cut into 9 or 12 squares.
  • Optional- Sift a light layer of powdered sugar and/or make the vanilla bean glaze by mixing the ½ cup of powdered sugar with 1 tablespoon of milk and 1 teaspoon of vanilla bean paste in a small bowl and drizzle over top.
