Brownie layer:
- ⅓ cup butter melted
- 2 tbsp avocado vegetable, canola, or olive oil
- 1/3 cup (75g) granulated sugar
- 2 tbsp (25g) brown sugar
- 1 large egg
- 1 tsp vanilla extract
- ⅓ cup (40g) unsweetened cocoa powder
- ⅓ cup (50g) flour
- ¼ tsp salt
- 9 reeses peanut butter cups
Graham cracker cookie:
- ¼ cup butter softened
- ¼ cup (60g) sugar
- 3 tbsp (35g) brown sugar
- ½ egg explained in instructions
- 1 tsp vanilla extract
- ¾ cup (110g) flour
- 1/2 tsp baking powder
- ½ tsp salt
- 4 graham crackers crushed up
- 9 regular size marshmallows

To make the brownie:
Preheat oven to 350°F. Lightly grease an 8x8 baking dish with cooking spray and line dish with parchment paper.
Melt butter and pour into a stand mixer bowl, along with olive oil and both sugars. Mix on medium with whisk attachment for about 1-2 minutes. Mix in eggs and vanilla extract. Sift in flour, cocoa powder, and salt. Mix on low just until combined.
Pour batter into prepared baking dish and spread to smooth the top evenly. Place peanut butter cups in the center of what would be each bar, so 3 lines of 3 peanut butter cups.
To make the graham cracker cookie topping:
In a medium bowl beat butter and both sugars together until fluffy. Over a bowl (that has a lid to keep half the egg to not waste it) break an egg but dump half the egg white into the bowl and break the yolk and dump approximately half into the bowl and keep for the next morning to make eggs. Pour the rest of the egg/egg white into the butter sugar mixture, along with vanilla extract. Mix until combined. Mix in flour, baking powder, and salt.
Fold in crushed graham cracker pieces. Take a piece and flatten it out with your hand and place it on top of the peanut butter cups, repeat until mostly covered. Bake for 15 minutes, take out and place one regular sized marshmallow in the middle of each bar, like the peanut butter cups were placed. Put back in the oven and bake for 5ish more minutes and broil until marshmallows are toasted. OR if you have a kitchen torch, you can toast them with that instead of broiling. Let cool for at least 5-10 minutes before cutting.
