Peanut Butter Blondies

Buttery, chewy peanut butter bars covered in a peanut butter frosting.

Materials

Peanut Butter Blondies

  • 1 cup flour
  • 1/2 cup sugar
  • ½ cup brown sugar
  • 1 egg
  • cup milk 2% or less
  • 1 tsp vanilla extract
  • cup peanut butter
  • ½ cup butter
  • ½ tsp baking soda
  • ½ tsp salt

Peanut Butter Frosting

  • 1/4 cup butter
  • 1/4 cup peanut butter
  • 3 tbsp milk 2% or whole
  • 1/2 tsp salt
  • 2 cups powdered sugar

Instructions

  • Preheat the oven to 350 F and line a 13x9 baking pan with parchment paper.
  • In a medium mixing bowl, whisk together flour, granulated sugar, brown sugar, salt, and baking soda.
  • In a medium microwave safe bowl, melt peanut butter and butter.
  • Pour melted peanut butter/butter mixture into the medium mixing bowl with the flour. Fold with a rubber spatula until combined.
  • In a small bowl mix together egg, milk, and vanilla extract. Mix into the medium mixing bowl containing the other ingredients. Stir until combined.
  • Press mixture into the baking pan and bake for 15-20 minutes until golden and not jiggly.

Peanut Butter Frosting

  • In a medium microwave-safe bowl, melt (1/4 cup) peanut butter until partially liquified. Using a hand mixer mix in (1/4 cup) softened butter, (2 cups) powdered sugar, (3 tbsp) milk, and (1/2 tsp) salt. Spread evenly onto bars and place into the refrigerator for at least 20 minutes.
