Preheat the oven to 350 F and line cookie sheet parchment paper.
Beat the cold butter and both sugars in a stand mixer on medium speed with a towel over for cover- it will get messy if you don’t. Let mix until fluffy.
Add egg yolks and vanilla extract and mix on low for 30 seconds. Mix in flour and baking soda until just combined.
Separate the dough into 2 mixing bowls- one with 60% and the other with 40%.
In the bowl with 60%, fold in the chocolate chips.
In the bowl with 40%, mix in the hot chocolate mix and combine with hands until homogeneous.
With a medium cookie scoop, take a teaspoon size amount of the hot chocolate cookie dough and line the cookie scoop with it. Press the dough down gently to create a “cup.” With that, scoop the chocolate chip dough into the “cup.” So when the scoop gets released onto the cookie sheet, the hot chocolate dough is mostly showing. Repeat until you have each scoop of dough on the cookie sheet about 2 inches apart. (Look at the steps in photos above^ for a better understanding) Place mini dehydrated marshmallows around the hot chocolate dough.
Bake for 12-14 minutes and let cool on a cookie sheet for 5-10 minutes. Transfer the cookies to a cooling rack or enjoy!
